Bake for 12 to 14 minutes, turning the baking sheets halfway through, until golden brown. Transfer the cookies to a raised wire rack to cool. Store in an airtight jar or plastic bag for up to 3 days, or freeze in a plastic bag for up to 3 months.

Persimmon Cookies

Makes 24 cookies

It meant Christmas was coming when our mailman delivered a shoebox full of these puffy cookies, sent by my mom’s aunt Helen in early fall each year. The persimmons impart a little tang, which gets boosted with holiday spices and plenty of raisins and walnuts.

For best results, use soft, overly ripe persimmons, which are usually available in autumn after the first frost at farmer’s markets. Look for the Hachiya variety—deep orange orbs with pointed bottoms.
